How was your Cinco de Mayo?

Do you celebrate?

you know me, any reason to decorate a little

since it was just my man and I
 and even though we are 
trying..............
to get back on our healthy eating plan
I decided
to whip up a small celebration with a slightly healthier twist

on the menu:

baked chicken fajitas over spinach
small lime-a-rita
strawberry margarita cake

there are lots of great recipes for baked chicken fajitas out there
I make mine with slightly less seasoning because for some reason
my husband doesn't care for mexican food
I know, crazy.... 

I sprayed the dish with cooking spray
cut up chicken breast into strips
 (I used two breasts but you can use as many as you want)
slice a large red onion into strips
slice a green, yellow and red pepper into strips
one can of fire roasted diced tomato
(I would drain most of the juice but that's optional, either way)

Add the ingredients together.
Drizzle olive oil on top and mix together
Sprinkle with Montreal Steak Seasoning
You can use more typical mexican seasonings
(ie: fajita mix, cumin, chili seasoning etc)
I didn't because of the afore mentioned "my man doesn't care for mexican food"
Bake 400 degrees for 25 minutes

I put it over a bed of lettuce sprinkled with some black beans and a little cheese
but it could easily go into a burrito, taco or quesadilla.

I made a quick dressing out of salsa and light sour cream.

It was really delicious and healthy.




now this is where the dinner becomes somewhat less healthy

for dessert, because you know if you're having a celebration of any kind
there simply must be dessert
I decided to make a strawberry margarita cake


You will need:

1 box of white cake mix
3 egg whites
1 8 ounce can of bud light straw-ber-rita 
1/2 cup (plus a little more) canola oil
5 or 6 large strawberries diced into small pieces

Bake as directed on the box
I made mine in small bundt cake pan
so it took about 20 minutes

Let cool about 10 minutes and turn over unto plate
Make sure you grease and flour pan well before if using the small bundts

These were absolutely fabulous and because of the 
not exactly healthy fact, I served us each one
and promptly gave the rest away.


In the picture you will see butter and vanilla that I was going to use to make an icing but 
I decided in the end to just sprinkle a little powder sugar on it.





The margarita's you see were made from just 
one 8 ounce can of bud light lime-a-rita and
a 20 ounce cup of ice mixed in a blender

It made both drinks and they were really good.

We are not much for alcohol so it serves us well when having a little celebration
to buy the small pre-made in a can drinks.


We don't really have any decorations for this holiday 
not even margarita glasses as you can see
but I did have some fiesta ware and a bright color tablecloth
so that's all it takes to make an occasion a little special
even if it's just the two of you

Awards Night


One of the more fun activities for grandparents to enjoy is going to 
an Awards Nights for their grandchild.

It really doesn't matter what the award is or even if they win or not.

It's just celebrating all their work and accomplishments during their
growing up years......

and of course the "everything thing my grandchild does (no matter how
big or small) is totally awesome"  way that us grandparents tend to feel.

Sadly those will be coming to a close soon for our first born
granddaughter.  She's a junior this year.  One more year of high school.
Let's not talk about that........

Last night Taylor's FFA organization had their end of the year ceremony.

Taylor won the Career Development Events Award for her
Aquaculture Project.

We are really proud of you baby girl.
